2 lbs beef steak tips

1/4 cup all-purpose flour

2 tbsp vegetable oil

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tsp dried thyme

1 cup low-sodium beef broth

1 (12 oz) pkg baby carrots

1/2 cup light sour cream

Pat the steak tips dry. If needed, cut beef tips into 1-inch chunks, then toss with the flour, salt, and pepper. In an Instant Pot®, heat the oil on sauté function on high. Add beef to pot. Cook 6–7 min., searing on all sides, until golden brown.

To Instant Pot®, stir in the tomato paste, Worcestershire sauce, and thyme. Cook 30 sec.–1 min., stirring constantly. Add the broth, scraping up any browned bits with a wooden spoon. Turn off sauté function, and add the carrots.

Lock the lid and close the pressure release valve. Set Instant Pot® to high pressure. Cook 25 min., then let naturally release for 10 min. Manually release the remaining pressure. Stir in the sour cream. Season with salt and pepper. Garnish with the parsley to serve.
