Fast Quinoa Fried “Rice” with Chicken

Ingredients

> 2 (8.8 oz) pkgs Nature's Promise® Precooked White Quinoa
> 4 large eggs
> 1 (16 oz) bag frozen Asian stir-fry vegetable blend, thawed
> 2 cups shredded rotisserie chicken
> 1/3 cup stir-fry sauce

Microwave the quinoa according to package directions. Meanwhile, crack the eggs into a medium bowl, season with salt and pepper, and beat until combined. In a 12-inch nonstick skillet, heat 1 tbsp canola oil on medium-high. Add the beaten eggs and cook 3–4 min., until mostly set, stirring often. Transfer eggs to a clean bowl.

Wipe out skillet if needed, then add 1 tbsp canola oil. Add the stir-fry vegetables and season with salt and pepper. Cook 2–3 min., until vegetables are tender, stirring occasionally.

Add cooked quinoa to skillet, along with the chicken and stir-fry sauce. Season with salt and pepper and toss to combine. Cook 2–3 min., until quinoa is hot and everything is well combined, stirring often. Fold cooked eggs back into quinoa mixture and serve.
