> 4 beets
> salt

Steps

Preheat the oven to 350 °F.

Peel the beets and thinly slice using a food processor or a slicer or mandoline.

Place half the slices in a single layer on paper towels, sprinkle with salt (in moderation) and leave to dry for 15 min. to remove as much moisture as possible.

Line 2 baking trays with parchment paper and divide the dried beet slices between them. Bake until crisp, approx. 12 min., turning the slices after 6 min.

Transfer chips to a plate. Repeat steps 3 and 4 with remaining beet slices.

Serve immediately. The chips will stay crisp for about 1 hour.
