Air-Fried Artichokes

Inspired by a classic Roman dish of deep-fried artichokes, just four ingredients and an air fryer are all that is needed to create this easy side dish. The tender, crispy artichokes are sprinkled with lemon and parsley for a bright, fresh finish.

> 3 (14 oz) cans whole artichoke hearts
> 2 tbsp extra virgin olive oil
> 1 lemon
> 1 tbsp chopped parsley


Preheat air fryer to 400°F. Drain the artichokes and cut in half. Pat artichoke halves dry with paper towel. In a large bowl, combine artichokes and oil. Season with salt and pepper. Working in batches, air-fry artichokes 10–15 min., shaking every 5 min., until golden brown. Season with salt.
Meanwhile, zest the lemon into a small bowl and combine with the parsley. Cut zested lemon into wedges. Sprinkle air-fried artichokes with lemon-parsley mixture. Serve with lemon wedges.
