3 cups nonfat milk

2 cups egg whites

3 tbsp honey

1 1/2 tsp vanilla extract

1/4 tsp salt

1 (16 oz) loaf raisin bread, divided

2 cups peeled and chopped Gala apples

1 1/2 cups shredded Cheddar cheese

1 1/2 tsp ground cinnamon

1 tsp ground nutmeg

Cooking spray

1 tbsp confectioners' sugar

In a large bowl, whisk the milk, egg whites, honey, vanilla, and salt. Trim crusts off 7 bread slices and set aside. Cut the crusts and the remaining bread into 1-inch cubes. In a separate bowl, toss bread cubes with the apples, cheese, cinnamon, and nutmeg. Coat a 9x13-inch baking pan with cooking spray. Transfer the bread mixture to the pan. Lay the reserved crustless slices evenly on top, trimming to fit.

Whisk the milk mixture one more time, and then pour evenly over the bread. Press the bread down with the back of a spoon, to make sure it's evenly moist. Cover with plastic and refrigerate for at least 8 hours or up to 24 hours.

Preheat oven to 350°F. Remove plastic and cover casserole with foil. Bake, covered, for 40 min. Uncover and continue baking until puffed and lightly browned, about 20 more min. Turn off oven and let casserole stand for 10 min. before removing from oven. Dust with confectioners’ sugar and serve warm.
