Preheat oven to 250F. Wash apple. Slice thin on a mandolin grated or box grater. No need to remove seeds - they will fall out. Spread parchment paper on a baking sheet with sides. Lay out apple slices in a single layer on the baking sheet. Sprinkle with cinnamon. Bake for 2 1/2 hours. Let cool and enjoy!
