1 ½ cups light brown sugar

2 cups whole wheat flour

2 ½ sticks butter

1 tbsp cinnamon

½ tsp salt

½ cup pecans

4 large eggs

1 tsp vanilla extract

Mix ½ cup of the sugar and ¾ cup of the flour in a bowl. Cut 1 stick butter into cubes and add to the bowl with cinnamon and salt. Use your fingers to work mixture into a crumbly dough. Chop the nuts and mix into the dough. Cover and chill in the refrigerator.

Meanwhile, preheat the oven to 325°F. Break the eggs into a large bowl and add the remaining sugar. Beat with a mixer for 5 min. or until fluffy. Melt the remaining butter in a saucepan. Let cool slightly and stir into the egg mixture. Sift the remaining flour into the bowl and fold it together with the vanilla until thoroughly combined.

Peel and quarter the apples and remove the core. Cut the quarters into pieces. Grease a 9x13-inch baking dish, and spoon the batter into the dish. Arrange the apples on top. Layer the crumbs on top of that. Bake on the middle rack for 50 min. or until golden brown. Let cool to room temperature, then cut into 12 squares.
