Bacon, Egg, and Cheese Tortilla Wrap

This easy breakfast-for-lunch wrap is the perfect kid-friendly recipe for school lunches on days when you are short on time and ingredients.

Ingredients

> 2 slices microwave-ready bacon
> 2 tbsp cream cheese spread with garden vegetables
> 1 (8-inch) fajita or taco-size flour tortilla
> 1 large egg
> Cooking spray

Microwave the bacon according to package directions. Let cool briefly, then crumble into pieces. Spread the cream cheese all over the tortilla. In a small bowl, whisk the egg. Season with salt and pepper.

Coat a small or medium nonstick skillet thoroughly with the cooking spray and heat on medium. Add beaten egg and bacon and, using a spatula, stir 15–30 sec. Place tortilla, cream cheese–side down, on top of egg, pressing so tortilla sticks to egg.

Cook 30 sec. more, until egg is set on the bottom. Using spatula, flip tortilla onto a plate. Roll tortilla up tightly and cut in half to serve.
