Bacon, Spinach and Peppadew Sandwiches

If you like BLTs, you’ll love this updated version, which features the mild, slightly sweet, pickled peppers known as peppadews.

Ingredients

> 1 loaf Artisan Italian bread
> 8 slices precooked bacon
> 1/2 large ripe avocado
> 1 (5 oz) bag baby spinach
> 3 tbsp Caesar salad dressing
> 1/2 cup walnuts
> 1 (7 oz) jar peppadew peppers
> 1/2 cup crumbled goat cheese

Cut the baguette into 4 pieces and cut each piece in half horizontally to form 4 rolls. Warm bacon according to package directions.

Halve the avocado lengthwise and remove the pit. Scoop out the flesh with a spoon and cut into slices. Toss spinach with the salad dressing, avocado, and walnuts.

Drain the peppadews and slice. Place some of the spinach salad on half the bread slices. Top with the crumbled goat cheese, bacon, and peppadews and cover with the remaining bread slices. Serve the rest of the salad on the side.
