Baked Green Bean Fries

When the craving for French fries hits, turn to this green bean version for a salty treat you can feel good about. Coated in panko breadcrumbs and baked until crisp, these “fries” are also a sneaky way to get your kids to eat green vegetables.

Ingredients

> 12 oz whole green beans, trimmed
> 1/2 cup all-purpose flour
> 1 large egg
> 1/4 cup cold water
> 1/2 cup panko bread crumbs
> 1/2 tsp onion powder
> Dash of cayenne pepper, optional

Preheat the oven to 375°F. Line 2 large baking sheets with parchment paper and set aside. In a small bowl, whisk together flour, egg and water. Place panko crumbs on a plate. Dip green beans into batter, allowing excess to drip off, then dip into panko crumbs, coating evenly. Place beans in a single layer on prepared baking sheets. Bake for about 20 minutes, until crumbs are golden and crisp. Remove from oven and sprinkle with onion powder.

For zesty fries, sprinkle very lightly with cayenne.
