Ingredients

1 (8.8 oz) pkg cooked beets

1 medium onion

1 tbsp olive oil

4 oz crumbled feta cheese

2 sprigs mint

2 tbsp balsamic vinegar

Preheat the oven to 450°F. Thickly slice beets and cut onion into wedges. Place in a greased baking dish. Sprinkle with oil and season with salt and pepper. Roast 10-12 min., or until onion wedges are slightly brown.

While vegetables cook, chop mint leaves finely. Top beets with crumbled feta. Drizzle with vinegar and sprinkle with mint.
Tips
Instead of feta, you can use crumbled goat cheese.
