2 medium red bell peppers

2 slices fully cooked bacon

4 tbsp Nature's Promise® Organic Hummus

2- 4 leaves butter lettuce

1/4 lb deli low-sodium turkey slices

1 tomato, sliced

6- 8 red onion slices

Toothpicks (optional)
Steps

Cut out the stem from each pepper. Slice peppers in half and remove ribs and seeds. Microwave the bacon according to package directions.

Spread the hummus evenly over pepper halves. On 2 pepper halves, layer bacon slices, lettuce leaves, turkey slices, tomato slices, and red onion slices. Place remaining 2 halves on top. If needed, use toothpicks to hold sandwiches together.
Tips
For a Mediterranean-inspired twist, add feta, Kalamata olives, and tzatziki.
