2 (16 oz) pkgs frozen sliced or whole strawberries, thawed

2 (16 oz) pkgs frozen sliced peaches, thawed

2 tbsp honey

2 tsp lemon juice

To a blender in batches, add the berries, peaches, honey, and lemon juice. Purée the mixture until smooth. To a large pot or Dutch oven, transfer fruit mixture. Cook on medium heat for 50 min., until mixture is very thick, making sure to scrape bottom and sides occasionally.

Preheat oven to 200°F. Add reduced fruit mixture to 2 (18x13-inch) parchment-lined rimmed baking sheets, spreading into even layer about ⅛-inch thick, banging sheet pan on counter to make even if needed. Bake 3 hours to 3½ hours, until no longer tacky.

Transfer sheet to a rack and let cool completely. Using kitchen shears, cut the fruit leather on the paper into strips and roll up. Store in a resealable container for up to 1 week.
Tips
You can also use a dehydrator instead of the oven to finish the fruit leather. Set it to dry out overnight and have a snack ready for the next morning.
