Berry Chow

Sneak in extra nutrients with this fruit version of the party-favorite treat, puppy chow. Toss blueberries or grapes in a peanut butter–chocolate mix before coating in confectioners’ sugar.

Ingredients

> 2 tbsp semisweet chocolate morsels
> 2 tbsp peanut butter
> 1 tsp coconut oil
> 2 cups blueberries, washed and completely dry
> 3/4 cup confectioners' sugar, divided

To a medium microwave-safe bowl, add the chocolate, peanut butter, and coconut oil. Microwave 1–2 min. in 30-sec. intervals, until melted, stirring in between.

To a large bowl, add the blueberries. Toss with ¼ cup confectioners’ sugar. Add chocolate mixture to fruit and gently toss until evenly coated. Add remaining ½ cup sugar and toss again. Spread out on a parchment-lined plate and refrigerate 10 min., until set. Serve immediately or freeze and eat frozen.

Tips

Substitute seedless grapes for the blueberries for another twist on the recipe.

Make sure the fruit is completely dry before tossing with chocolate mixture or the chocolate will turn stiff and grainy.
