Ingredients

1 (15.5 oz) can black beans

½ onion

½ tbsp olive oil

1 (14 oz) pkg firm tofu

1 tsp cumin
>
¼ tsp cayenne
>
¼ tsp paprika
>
1 (15 oz) can tomato sauce
>
3 tomatoes
>
¼ cup cilantro
>
2 ripe avocados
>
8 corn tortillas
>
6 oz queso blanco
>
1 (16 oz) jar mild salsa

Heat the beans according to package directions. Meanwhile, dice the onion. Drain the tofu, pat dry with paper towels and cut into cubes. Heat the oil in a frying pan and cook the onion over medium heat 2 min. Add the tofu and spices and cook for 2 min. Add the tomato sauce and cook over high heat for 3 min. Reduce heat to a simmer and cook on low until sauce is reduced, about 10 min.

Meanwhile, cut the tomatoes into wedges and chop the cilantro. Cut the avocados in half lengthwise. Remove the pit and peel and cut the flesh into slices.

Heat the tortillas according to package directions. Divide the beans, tofu, and other toppings among the tortillas. Sprinkle cheese on top. Serve with the salsa.
