Braised Red Cabbage

This sweet-and-savory side dish is an excellent accompaniment to everything from pork chops to roast chicken.

> 4 shallots
> 1 small red cabbage
> 1 cup dry red wine
> 2 bay leaves
> 1 tbsp sugar


Thinly slice the shallots. Core and thinly slice the cabbage.
To a large greased pot, add shallots. Cook 2–3 min. on medium-high heat, until golden, stirring often.
Add the wine and bay leaves. Reduce heat to medium and simmer 5 min., until wine is reduced by half, stirring occasionally.
Stir in cabbage and sugar. Season with salt and pepper.
Cover with lid. Cook 15–18 min., until cabbage is tender, stirring occasionally.
