3 tbsp olive oil

3 tbsp Dijon mustard

2 tbsp apple cider vinegar

1 tbsp honey

1 large head broccoli (about 1 1/4 lbs)

1 (8.8 oz) pkg Nature's Promise ® Precooked Red Quinoa

1/2 cup shredded Cheddar cheese

1/4 cup chopped red onion

To a large bowl, add the oil, mustard, vinegar, and honey. Season with salt and pepper. Whisk together.

Heat a large pot of salted water to a boil on high. Peel the stem of the broccoli. Cut the broccoli into large florets (around 4 cups). Add broccoli to boiling water and cook until crisp-tender, 3–4 min. Drain in colander and rinse with cold water to stop broccoli from cooking. Drain well. Finely chop the broccoli into smaller pieces.

Microwave the quinoa according to package directions. Add to bowl with dressing mixture along with the cheese, red onion, and broccoli, tossing to combine. Season with salt and pepper.
