Cabbage Wrap with Tuna, Apple, and Carrot

Instead of bocconcini, you can cut an 8 oz ball of fresh mozzarella into cubes.

Ingredients

> ½ apple
> 3 green onions
> 1 (5 oz) can tuna packed in water, drained
> 1 tbsp lemon juice
> 1 tbsp plain yogurt
> 2 tbsp olive oil
> 1 head savoy cabbage
> 1 cup mozzarella pearls
> ½ cup shredded carrots

Bring a pot of water to a boil. Finely dice the apple and thinly slice green onion. Mix the tuna, apple, and green onions in a bowl. Add the lemon, yogurt, and olive oil and stir until fully combined. Season with salt and pepper to taste.

Arrange a bowl of ice water next to the pot of boiling water. Remove and discard outer leaves from cabbage. Peel 4 large leaves from the cabbage. Use tongs to submerge them in the boiling water until soft (about 1 min.) and then into the ice water. Pat dry.

Arrange the blanched leaves on a flat surface and fill with tuna mixture, mozzarella, and carrots. Season with salt and pepper to taste. Carefully roll the wraps and secure with strips of parchment paper and kitchen twine.
