Ingredients

1 (3 lb) bag baby carrots

1 tbsp olive oil

1/2 cup orange marmalade
>
1/2 cup orange juice
>
1/2 tsp cumin
>
1/2 tsp cinnamon
>
2 tbsp chopped parsley

Preheat oven to 425F. Lay baby carrots out on a rimmed baking tray in a single layer. Drizzle olive oil over top and season with salt and pepper. Gently toss and place in the oven. Roast in the oven for 15-18 minutes or until carrots are lightly browned and tender, stirring once halfway through the cooking time.

While carrots are roasting, combine the orange marmalade, orange juice, cumin and cinnamon in a 12 inch skillet over medium heat. Simmer until slightly thickened, about 6-8 minutes.

Once carrots are cooked, add to the skillet with the orange glaze. Cook for an additional 2-3 minutes or until carrots are coated. Sprinkle with chopped parsley and serve.
