Caprese Mini Frittatas

Brunch is easy and affordable with these mini frittatas. The fresh flavors of a classic caprese are paired with protein-rich eggs for a new breakfast staple.

Ingredients

> Cooking spray
> 10 large eggs
> 1/2 cup reduced-fat sour cream
> 3/4 cup shredded mozzarella cheese
> 1 pint cherry or grape tomatoes, halved
> 1/4 cup thinly sliced basil

Preheat oven to 325°F. Lightly grease a 12-cup muffin tin with the cooking spray. In a large bowl, combine the eggs, sour cream, and cheese. Season with salt and pepper. Whisk until thoroughly combined. Pour into a large liquid measuring cup.

Divide the tomatoes and basil evenly among greased muffin cups. Carefully pour egg mixture over. Bake 20–25 min., until eggs are just set in the center and edges are beginning to brown, rotating the muffin tin halfway through. Let frittatas cool in muffin tin 10 min. before removing.
