Cauliflower Gnocchi with Marinara Sauce

Ingredients

> 2 (12 oz) bags steam-in-bag frozen riced cauliflower
> 1 1/2 cups all-purpose flour, plus more for dusting
> 1 large egg
> 2 tbsp grated Parmesan cheese, plus more to garnish
> 2 cups Nature's Promise® Organic Tomato Basil Pasta Sauce
> 1 tbsp chopped parsley (optional)

Microwave the cauliflower on high 5–6 min., according to package directions. Carefully drain any liquid in the bags. Transfer cauliflower to a bowl and let cool slightly. To bowl, add the flour, egg, and Parmesan. Season with salt and pepper.

With hands, mix and knead dough until it just comes together but is still a little sticky, adding more flour if needed. Transfer dough to a lightly floured surface. Cut dough into 4 pieces. Roll 1 piece into a 1-inch-thick rope, cutting in half if needed. Slice rope into ½-inch squares. Repeat with remaining dough.

Bring a large pot of salted water to a boil over high. In batches, add gnocchi to pot. Cook about 2 min., until fully cooked, stirring constantly. Using a slotted spoon, transfer cooked gnocchi to a bowl.

Drain water from pot. Add the tomato sauce. Heat on medium-high until sauce is bubbling. Add cooked gnocchi and stir gently to coat. Garnish with more Parmesan and the parsley, if desired. Serve immediately.
