Chicken and Pancakes

Air-fried chicken strips and pancakes from a mix make this fun twist on breakfast-for-dinner so easy. A drizzle of maple syrup and a side of fresh fruit complete the kid-friendly meal.

Ingredients

> Cooking spray
> 1 (24 oz) pkg Nature's Promise ® Chicken Strips
> 2 cup original pancake and waffle mix
> 1 1/2 cups low-fat milk
> 2 large eggs
> Maple syrup, to serve
> Fresh-cut fruit, to serve

Preheat air fryer to 400°F. Lightly coat air fryer basket with the cooking spray. Working in batches, if necessary, add the chicken in an even layer. Cook 7–8 min., flipping once, until browned. Transfer to a plate and cover with foil to keep warm.

Meanwhile, in a large mixing bowl, whisk together the pancake mix, milk, and eggs until blended. Lightly grease a 12-inch nonstick skillet with cooking spray and heat on medium. Add the batter, ¼ cup at a time, to form pancakes, and cook 1–2 min., until edges begin to set and bubbles start to form on surface. Turn pancakes over and cook another 1 min., until bottoms are golden brown. Repeat with remaining pancake batter.

Serve the chicken strips on top of the pancakes and drizzle with the maple syrup. Serve with the fruit on the side.
