1 tbsp olive oil

1 (12 oz) pkg fresh vegetables fajita blend

1 (15.5 oz) can pinto beans, drained and rinsed

1 (8.8 oz) pkg Nature's Promise ® 90 Second Mexican-Style Rice with Corn & Beans
>
4 burrito-size flour tortillas
>
4 pieces deli-sliced roast beef
>
1/2 cup store-bought guacamole, plus more to serve

In a 12-inch skillet, heat the oil on high. Add the fajita blend and season with salt and pepper. Cook 4–6 min., until vegetables are tender. Add the pinto beans and reduce heat to medium. Cook 1–2 min., until warm. Remove from heat and cover to keep warm.

Meanwhile, heat the rice according to package directions. Divide rice among tortillas, then top with the roast beef, vegetables, and guacamole. Fold bottom of each tortilla over filling, tuck in sides, and tightly roll. Serve with more guacamole along with salsa and sour cream.
