Ingredients

1 tbsp olive oil

4 (6 - 8 oz) salmon fillets

1/2 cup maple syrup
>
2 chipotle chilis in adobo sauce, chopped
>
2 tsp yellow mustard
>
1 tsp garlic powder
>
1 tbsp low sodium soy sauce
>
1 (12 oz) pkg fresh broccoli and cauliflower

Preheat a large nonstick skillet over medium high heat and the oven to 400 F.

Pat fish filets dry with a paper towel. Mix together the maple syrup, mustard, garlic powder and soy sauce in a small bowl. Cut the broccoli and cauliflower into small pieces.

Add the olive oil to hot pan, followed by the salmon. Cook, for 2-3 minutes or until filets are golden brown. Flip the salmon and add the veggies to the pan around the filets. Drizzle the maple-chipotle sauce over the salmon and vegetables.

Place skillet in oven and bake for 8-10 minutes or until salmon is cooked through and easily flakes with a fork.
