Chocolate & Peanut Butter–Stuffed Dates

Ingredients

> 1 (10 oz) pkg Nature's Promise® Organic Medjool Dates
> 1/4 cup natural peanut butter
> 1/4 cup dark chocolate chips
> 1 tbsp roasted unsalted peanuts, finely chopped (optional)

Using a paring knife, carefully cut into each date lengthwise to remove pit, making sure not to slice all the way through. Using a small spoon, fill dates with the peanut butter.

To a small microwave-safe bowl, add the chocolate chips. Microwave in 30-sec. increments, until melted, stirring to combine. Using a spoon, drizzle melted chocolate over dates. If desired, sprinkle the peanuts over chocolate. Refrigerate 15 min., until set.
