Chunky Apple Sauce

Use past-their-prime apples to make a big batch of this sweet treat, which makes for a quick snack or guilt-free dessert topped with some granola and a dollop of vanilla yogurt.

Ingredients

> 3 lbs McIntosh apples
> 1/2 cup apple cider
> 1/4 cup packed brown sugar
> 2 tsp lemon juice
> 1 cinnamon stick

Peel the apples and cut into 1-inch pieces. Place in a heavy-duty pot with cider, brown sugar, lemon juice, and cinnamon. Bring to a boil and reduce to a rolling simmer.

Cover the pot and cook for 15 min., stirring occasionally, until the apples are tender. Remove and discard the cinnamon stick. Mash the apples using a potato masher to desired consistency.
