3 lbs McIntosh apples

1/2 cup apple cider

1/4 cup packed brown sugar

2 tsp lemon juice

1 cinnamon stick

Peel the apples and cut into 1-inch pieces. Place in a heavy-duty pot with cider, brown sugar, lemon juice, and cinnamon. Bring to a boil and reduce to a rolling simmer.

Cover the pot and cook for 15 min., stirring occasionally, until the apples are tender. Remove and discard the cinnamon stick. Mash the apples using a potato masher to desired consistency.
