Cold Avocado-Cucumber Soup

Cool off with this quick and easy chilled soup. Avocado and yogurt add richness, while cucumber and lime juice keep the soup refreshing.

> 2 avocados
> 2 English cucumbers
> 1 cup low-sodium chicken broth
> 1 cup plain nonfat yogurt
> 1/4 cup green onions
> 2 tsp lime juice
> 1/2 cup ice cubes
> 1 cup cubed ham
> 1/4 cup thinly sliced radishes, to garnish
> Olive oil, to garnish


Halve and pit the avocados. Roughly chop the cucumbers. To a blender, add the chicken broth, yogurt, green onions, lime juice, avocados, and cucumbers. Season with salt and pepper. Add the ice cubes, and blend 1–2 min., until smooth.
Microwave the ham 30 sec.–1 min., until warm. Pour soup into bowls. Garnish with ham, sliced radishes, and olive oil.
