Cooked Perfect® Quinoa Vegetable Salad with Chicken Meatballs

Ingredients

> 1 (12 oz) pkg Cooked Perfect Italian Style with Parmesan & Mozzarella Chicken Meatballs
> 2 cups prepared quinoa
> 1 cup frozen peas, thawed
> 1 cup frozen corn, thawed
> 1/4 cup diced red bell pepper
> 1/4 cup diced red onion
> 1 (6 oz) bag fresh spinach
> 1 tbsp fresh oregano leaves, chopped
> 1/4 cup extra virgin olive oil
> Juice of one lemon

Steps

Heat meatballs in microwave as directed.

While meatballs heat, combine quinoa, peas corn, peppers, onions and spinach in large mixing bowl.

When meatballs are ready, add to mixing bowl with oregano and drizzle olive oil and lemon juice and mix thoroughly. Divide among four bowls and serve immediately.
