1 (12 oz) box radiatore or rotini pasta

1 (16 oz) bag frozen peas, thawed

1 cup 1% milkfat cottage cheese
>
2 tsp lemon zest
>
2 cloves garlic
>
1/4 tsp crushed red pepper (optional)

Bring a large pot of salted water to a boil. Cook the pasta according to package directions. Reserve ½ cup pasta water, then drain pasta.

Meanwhile, microwave the peas according to package directions. To a food processor, add the cottage cheese, half of peas, lemon zest, garlic, and crushed red pepper, if using. Season with salt and pepper. Pulse until smooth.

Return cooked pasta to pot, add remaining peas, and heat on medium. Add cottage cheese mixture and toss to combine. If pasta is too dry, add ¼ cup pasta water and toss to coat, adding more if needed. Season with salt and pepper.
