Crumb Topped Jam Bars

Flaky, buttery jam bars are a sweet addition to any holiday spread.

Ingredients

> 1 3/4 sticks unsalted butter, cold, cut into small cubes
> 2 cups flour
> 1 cup sugar
> 1/3 cup raspberry jam

Preheat the oven to 400°F. Combine the butter, flour, and sugar in a bowl and knead with your fingertips until it forms a crumbly dough. Grease a 9x9-inch baking dish and spread half the dough over it. Press dough down firmly with hands.

Gently spread the jam over the dough. Sprinkle the remaining crumb mixture evenly over the top and press down gently, using a rubber spatula. Bake in the oven for about 20 min., or until golden brown. Remove from oven and let cool.

Using a knife, separate the pastry from the sides of the pan. Slice into 25 square bars.

Feel free to use any other type of jam, like strawberry, blackberry, or apricot.
