Ingredients

1 (5 oz) pkg saffron yellow rice mix

1 tbsp vegetable oil

2 cloves garlic, sliced

2 leeks, sliced

1 (16 oz) bag frozen garden peas

1 (15 oz) jar korma simmer sauce
>
1 tbsp fish sauce
>
12 oz cod
>
3 scallions, sliced
>
1/4 cup chopped, roasted cashews

Cook the rice according to package directions.

Heat the oil in a frying pan and fry the garlic and leeks for 4 min. on medium heat. Add the garden peas, korma sauce and fish sauce and cook 4 min. on low heat. Stir frequently.

Add the cod to the sauce and cook 3 min. on each side, or until fish flakes easily. Stir the scallions and nuts into the rice and serve with the fish.
