Ingredients

1 (12 oz) pkg fresh fajita blend vegetables

1 pint grape tomatoes

1 tsp sweet paprika

1 (5 oz) pkg Nature's Promise ® Organic Baby Spinach & Kale

1 (12 oz) pkg Nature's Promise ® Wild Caught Alaska Cod, thawed

Heat a 12-inch greased nonstick skillet on medium-high. Add the fajita blend and tomatoes. Season with salt and pepper. Cook 5 min., until vegetables are almost tender.

To skillet, add ¼ cup water and the paprika. Season well with salt and pepper. Bring to a boil on high. Stir in the spinach mix in batches to wilt.

Season the cod with salt and pepper. Once liquid in pan is simmering, add cod to skillet. Spoon some of the liquid over the cod, then reduce heat to low and cover. Cook 8–10 min., until cod is cooked through. Serve immediately.
Tips
If desired, garnish with parsley and serve with 2 (8.8 oz) pkgs Nature’s Promise® Precooked White Quinoa.
