Easy Latkes with Chive-Lemon Sour Cream

Make this Hannukah favorite all eight nights with the help of a boxed mix. Serve with chive-lemon sour cream, classic applesauce, or any of your favorite toppings.

> 1 (6 oz) box potato latke mix
> 2 large eggs
> Water, as needed
> vegetable oil, for frying
> 1/4 cup fat-free sour cream
> 1 tbsp finely chopped chives
> 1/2 lemon
> Applesauce, to serve (optional)


Prepare the latke mix according to package directions using the eggs and water. Season with pepper, if desired. Let batter thicken at room temperature 4–5 min., then stir. Line a large plate with paper towels.
In a 12-inch skillet, heat 2 tbsp oil on medium-high. Working in batches, spoon 2-tbsp mounds of batter into pan and flatten slightly. Cook 2–3 min. per side, until golden brown. Transfer latkes to paper towel–lined plate. Season with salt. Repeat with remaining batter, adding more oil as needed.
Meanwhile, in a small bowl, combine the sour cream and chives. Zest the lemon half into bowl. Season with salt and pepper and stir to combine. Serve latkes with sour cream mixture and applesauce, if desired.


To keep your finished latkes warm after frying, transfer them to a foil-lined baking sheet and place in a 250°F oven until ready to serve.
