Mashed Potatoes

Sometimes you can’t beat a heaping helping of creamy, perfect mashed potatoes. This simple recipe is a go-to for any night of the week.

Ingredients

> 2 lbs Yukon Gold potatoes, scrubbed
> 3/4 cup half & half
> 4 tbsp butter, melted

Cut the potatoes into quarters and place in a large pot. Add enough water to cover by 1 inch. Season well with salt. Heat to a boil on high, partially covered. Reduce heat and simmer 15–20 min., until very tender.

Drain potatoes well and return to pot. Add the half & half and butter. Mash until just smooth. Season with salt and pepper.

Tips

Flavor combinations:

Sour cream and horseradish: Stir ½ cup sour cream and 1–2 tbsp prepared horseradish into mashed potatoes.

Colcannon: Sauté 1 sliced leek in butter until tender. Add 4 cups thinly sliced cabbage and sauté until tender. Stir into mashed potatoes.

Chipotle and Cheddar: Stir 1–2 finely chopped chipotle peppers in adobo sauce and 1 cup shredded Cheddar cheese into mashed potatoes
