4 (4 oz) Nature's Promise® Skin-on Salmon Fillets

1 tbsp everything bagel seasoning

1 lemon

1 cup low-fat Greek yogurt

2 tbsp capers, drained and chopped

1 cup grape tomatoes

1 cucumber
>
1/2 cup thinly sliced red onion
>
1 tbsp olive oil

2 (8.8 oz) pkgs Nature's Promise® Precooked White Quinoa

Preheat broiler on high. Line a rimmed baking sheet with foil. Arrange the salmon on prepared pan, skin-sides down. Season with the everything bagel seasoning, salt, and pepper. Broil salmon 5–6 min., until cooked through.

Into a small bowl, finely grate the lemon zest, then squeeze 1 tbsp juice. Add the Greek yogurt, capers, and 3 tbsp water. Season with salt and pepper and mix until combined. Halve the grape tomatoes and thinly slice the cucumber into half-moons, then add to a medium bowl along with the onions. Drizzle vegetables with the oil and season with salt and pepper. Toss to combine.

Microwave the quinoa according to package directions. Divide the quinoa among 4 bowls, then top with salmon, tomato salad, and yogurt sauce.
