Ingredients

Cooking spray

2 (10 oz) cans red or green enchilada sauce

3 cups shredded leftover roast turkey
>
1 (10 3/4 oz) can Cheddar cheese soup
>
1/2 cup chunky salsa
>
1 (4 oz) can diced green chilies
>
8 enchilada size flour tortillas
>
1 cup shredded Mexican cheese blend
>
Sour cream, chopped cilantro, diced avocado and lime wedges, to serve (optional)

Preheat oven to 425°F. Spray a 12x8-inch baking dish with cooking spray and spread ½ cup enchilada sauce on bottom of dish. In a large bowl, mix together turkey, soup, salsa and green chilies.

Spoon ½ cup turkey mixture along center of each tortilla. Place seam side down in baking dish and pour over remaining sauce and sprinkle
with cheese. Cover with foil and bake for 15 min. Remove foil and continue baking for another 10 min., or until lightly browned and bubbly. Serve with sour cream, chopped cilantro, diced avocado and lime wedges, if desired.
