Ingredients
>
1 (14 oz) pkg Nature's Promise Organic Butternut Squash
>
1/2 cup low-sodium chicken broth
>
1/4 cup low-fat milk
>
3 tbsp butter, room temperature
>
3/4 tsp ground cayenne
>
1/2 tsp ground ginger
>
4 boneless pork chops
>
3 tbsp honey
>
2 tsp balsamic vinegar
>
1 1/2 tsp garlic powder
Steps
1
To a heatproof medium bowl, add the butternut squash and chicken broth. Season with salt (in moderation) and pepper. Cover with plastic wrap and cook in the microwave 8 min., until squash is very tender.
2
To the bowl with squash, add the milk, butter, cayenne, and ginger. With a potato masher, mash the mixture until mostly smooth. Add more milk or chicken broth, if needed. Cover with plastic and reserve.
3
Meanwhile, season the pork with salt (in moderation). In a small bowl, combine honey, vinegar, garlic powder, salt (in moderation) and pepper.
4
In a greased nonstick skillet, heat on medium-high. Cook pork chops 2 min. per side. Reduce heat to medium-low and add honey mixture. Cook 1 min., until pork is glazed with honey, turning pork occasionally. Serve pork chops over mash.
5
Combine squash and broth. Microwave 8 min., until soft.
6
Add milk, butter, cayenne, and ginger to squash and mash until smooth. Cool and refrigerate.
7
Whisk together honey, vinegar, garlic powder, salt, and pepper. Cover.
8
In greased nonstick skillet, cook pork 4 min. Add honey mixture and cook 1 min., until glaze reduces and pork is cooked.
9
Microwave sweet potato mash 3 min., until hot.
