1 (4 lb) brisket

2 tbsp olive oil

2 large onions

1 1/2 cups low-sodium beef broth

3 tbsp ketchup

2 tbsp package onion soup mix

3 tbsp cornstarch

1/4 cup parsley

Cut the brisket into quarters. Season with salt (in moderation) and pepper. In a large, heavy skillet, heat the oil on high and sear the brisket pieces 3 min. per side, until browned, and in batches, if necessary.

Peel and slice the onions. Place the onions in a 6–7 quart slow cooker. Stir in beef broth, ketchup, and soup mix. Place the brisket pieces on top and cover. Cook on low 8–10 hours, until very tender.

Transfer the brisket to a large cutting board and chop into bite-size pieces. Meanwhile, transfer cooking liquid and onions to a medium pot and heat to a simmer on high. In a small bowl, stir together the cornstarch and ½ cup water until until. When liquid in pot is simmering, whisk in cornstarch mixture. Cook 2–3 min., until slightly thickened. Chop the parsley. In a large bowl, combine chopped brisket and enough cooking liquid to coat. Add parsley and toss until combined.

Split and toast the buns until golden. Divide brisket among buns and serve immediately.
Tips
Return the brisket to the slow cooker set on the warm function and leave the buns next to it on your buffet table so guests can serve themselves.
