Gnocchi with Mushrooms and Cheese

If you can find dried porcini mushrooms, they'll give this dish an even more intense flavor.

Ingredients

> 1 (12 oz) package green beans, trimmed
> 3 tbsp olive oil
> 3 cloves garlic, thinly sliced
> 8 oz mushrooms, sliced
> 1 lemon
> 1 (16 oz) package frozen potato gnocchi
> 1/2 cup fresh parsley, coarsley chopped
> 1/4 cup grated Parmesan cheese

In a pot of boiling water cook green beans 8 min., or until tender.

Heat 2 tbsp oil in a large skillet over medium high heat and saute the garlic for 1 min. Add the mushrooms and cook 5 min., or until softened. Zest the lemon.

Cook the gnocchi according to package directions. Mix the gnocchi with 1 tbsp oil, the mushroom garlic mixture and chopped parsley. Season with pepper and salt (in moderation) and sprinkle with cheese.

Cut the lemon in half and juice one half. Drizzle over the drained green beans and sprinkle on the lemon zest and pepper and salt (in moderation). Divide the gnocchi and green beans among 4 plates.

Tips

For a more intense flavor, use dried porcini mushrooms in place of the mushrooms. Soak ½ oz dried mushrooms in boiling water for about 5 minutes. Drain thoroughly, chop and add to the garlic-mushroom mixture.
