> 6 cups red leaf lettuce or baby greens, washed
> 1 medium cucumber, peeled in strips and sliced
> 2 tbsp white vinegar
> 2 tsp Dijon mustard
> 1 tbsp olive oil
> freshly ground black pepper
> Chopped fresh parsley for garnish
Divide the lettuce and cucumber slices among 4 salad plates.
In a small bowl, whisk together vinegar and mustard; add olive oil and continue to whisk until ingredients combine.
Drizzle dressing over salad. Season with black pepper and garnish with parsley.
