Ingredients

1 red onion

3 tbsp red wine vinegar

1 pinch salt

2 bunches asparagus
>
4 tbsp olive oil
>
1 zucchini
>
1 cup Nature's Promise® Roasted No-salt Almonds

Halve the onion and slice thinly. Transfer to a bowl and toss with the vinegar and salt.

Trim the ends of the asparagus. Brush the stalks with half of the oil.

Heat an ungreased ridged grill pan and cook the washed asparagus 4 min., or until tender. Turn regularly so asparagus cooks evenly. Remove from the pan and arrange on a plate.

Cut the zucchini into diagonal slices, toss with the the remaining oil and grill for 5 min., flipping halfway.

Combine the zucchini, onions with vinegar and asparagus and toss.

Roughly chop the almonds, sprinkle on top of the salad and serve.
