Set a grill to medium-high heat. Grill corn until grill marks form, turning occasionally, about 7 min. Slather corn cobs with butter and drizzle with juice from the lime. Season with crumbled queso fresco and paprika.
Tips
Try shaved Parmesan or grated white Cheddar, too.
