Grilled Horseradish Roast Beef and Sourdough Sandwich

Ingredients

> 8 slices sourdough bread
> 2 tbsp mayonnaise
> 1 lb thinly sliced Taste of Inspirations Horseradish Flavored Roast Beef
> 1 (16 oz) pkg frozen spinach, thawed
> 1 cup sliced roasted red pepper strips
> 8 slices of provolone cheese
> 1/4 cup butter, softened

Lay out sandwich bread on a clean surface. Spread a thin layer of mayonnaise on each piece of bread

Layer the cheese and roast beef on top of half (4) of the bread slices. Squeeze the liquid out of the spinach and divide among the 4 sandwiches. Top with roasted red peppers, cheese and the other bread slice.

Preheat a large, nonstick skillet over medium heat. Spread the softened butter on both sides of the sandwich bread. Add to the pan and cook for 4-5 minutes or until golden brown. Flip and place another heavy pan on top of the sandwiches to flatten. Cook for another 4-5 min or until bread is golden brown and crispy. Remove and slice in half.
