Grilled Hummus and Zucchini Pizza

This affordable 5-ingredient grilled pizza recipe comes together in under 20 minutes and is plant-forward. It’s a great, lighter way to still enjoy pizza on even the hottest summer day.

> 2 medium zucchini
> 2 tbsp olive oil, divided
> 1 tsp Italian seasoning
> 1 (1 lb) ball whole-wheat pizza dough, room temperature
> 1 cup Nature's Promise® Organic Roasted Red Pepper Hummus


Preheat grill or grill pan over medium. Cut the zucchini diagonally into ¼-inch-thick slices. In a large bowl, toss zucchini slices with 1 tbsp oil and the Italian seasoning. Season with salt and pepper. Add zucchini to grill and cook 5 min., until tender and lightly charred, turning halfway through.
Increase grill or grill pan to medium-high. Divide the dough into 4 evenly sized balls and flatten into 7-inch circles. Add dough to grill and cook 6–8 min., flipping halfway through. Remove pizzas from grill and spread the hummus evenly on pizzas. Top with grilled zucchini and drizzle with remaining 1 tbsp oil. Serve immediately.
