Ingredients

4 large eggs

1 cup almond milk

2 tsp pure vanilla extract

1 tsp ground cinnamon

1/4 tsp nutmeg

1/4 tsp salt

4 hot cross buns, cut in half, preferably a day old

4 tbsp unsalted butter
>
1 cup frozen mixed berries, thawed
>
1/2 cup maple syrup

Beat eggs in a large bowl then add milk, vanilla, cinnamon, nutmeg and salt and mix until well combined.

Melt butter in a large non-stick skillet.

Dip 2 bun halves in egg mixture until well saturated and transfer to hot skillet. Pressing down to flatten slightly, cook until golden brown, then flip and cook the other side. Transfer to a plate and cover to keep warm.

Repeat with remaining buns, and serve with mixed berries and maple syrup.
