Ingredients

> 2 lbs cubed beef stew meat
> 1 small yellow onion, coarsely chopped
> 5 tbsp chili powder
> 2 cups low-sodium beef broth
> 2 (8.8 oz) Nature's Promise ® Mexican-style rice

Heat a greased Instant Pot® on sauté function on high. Season the beef all over with salt and pepper. In batches, add beef to pot. Cook 6–7 min., searing on all sides, until golden brown. Transfer seared beef to a bowl.

To Instant Pot®, add the onion. Cook 5 min., until softened. Add the chili powder and cook 1 min., stirring constantly. Add the broth, scraping up any browned bits with a wooden spoon. Turn off sauté function. Return beef to pot. Lock the lid and close the pressure release valve. Set Instant Pot® to pressure cook on high. Cook 70 min., then let naturally release for 20 min.

Using a slotted spoon, transfer beef and onions to a bowl and cover to keep warm. Skim fat off the top of cooking liquid. Set Instant Pot® to sauté function on high. Cook 10–12 min., until liquid is thick enough to coat the back of a spoon. Return beef and onions to sauce and season with salt and pepper. Meanwhile, heat the rice according to package directions. Serve beef over rice.

Tips

If desired, garnish with sour cream, chopped green onions, and fresh cilantro.
