Irish Soda Bread

Baking in a cast-iron skillet helps this traditional soda bread keep its round shape and brown evenly on the bottom. Spread with softened butter and enjoy!

Ingredients

> 4 cups all-purpose flour
> 1 tsp baking powder
> 1 tsp salt
> 1/2 cup sugar
> 1/4 cup vegetable shortening
> 2 tbsp caraway seeds
> 2 cups raisins
> 1 1/3 cups buttermilk
> 1 tsp baking soda
> 1 large egg

Preheat oven to 350°F. In a large bowl, combine flour, baking powder, salt and sugar. Using your hands, cut in shortening until mixture is crumbly. Mix in caraway seeds and raisins.

In a separate bowl, mix buttermilk, baking soda and egg until combined. Add wet ingredients to bowl with dry ingredients and mix until just combined. Knead dough 4 to 5 times. Place dough in an 8” cast-iron skillet. Bake until top is browned, about 1 hour.

Tips

A good batch of soda bread will sound hollow when you knock on it lightly.
