In this easy make-ahead appetizer, a tangy, herb-flecked marinade is poured over slices of cream cheese, Colby Jack, and Cheddar and left to marinate overnight. It’ll be the hit of any party, especially with an assortment of crackers to scoop up all the creamy, tangy goodness.

Ingredients

> 2 (8 oz) pkgs cream cheese, cold, divided
> 1 (7 oz) pkg Colby Jack cheese cracker cut slices
> 1 (7 oz) pkg extra sharp cheddar cheese cracker cut slices
> 1 cup robust Italian dressing
> 1/4 cup finely chopped roasted red peppers
> 1/4 cup chopped green onions
> 1/4 cup chopped fresh parsley

Cut the cream cheese packages in half lengthwise and reserve ½ package for another use. Unwrap remaining halves and cut crosswise into ¼-inch-thick square slices.

In an 8x8-inch baking dish, arrange cheese slices standing on edge, alternating cream cheese slices with the Colby Jack and Cheddar cracker cut slices.

Pour the Italian dressing over cheese slices and evenly top with the red peppers, green onions, and parsley. Cover and refrigerate for at least 6 hours or overnight. Serve with the crackers.
