Ingredients

> 1/2 (8 oz) pkg frozen calamari , thawed
> 1/2 lb frozen mussels, thawed
> 1/4 (1 lb) pkg frozen peeled shrimp, thawed
> 1 onion
> 2 green bell peppers
> 4 tbsp olive oil
> 2 tsp minced garlic
> 1 (14.5 oz) can diced tomatoes
> 3 tsp Cajun seasoning
> 3 cups Minute rice
> 3/4 cup peanuts

Chop the onions. Cut the peppers into 1-inch cubes. Heat the olive oil in a skillet over medium-high heat. Sauté the onions and garlic until fragrant, 2 min. Add peppers and sauté for 3 min. Add the diced tomatoes and Cajun seasoning and cook, stirring occasionally, for 3 min.

Meanwhile, prepare rice according to package instructions. Slice the calamari into ½-inch slices. Add the calamari, mussels, and shrimp to the pan. Reduce heat to low and cover. Steam for 3 min. until seafood is cooked. Carefully remove and discard the mussel shells.

Add rice to the pan with the seafood and stir until completely combined. Serve in bowls and garnish with peanuts.
