1 1/2 lbs kohlrabi bulbs

1/4 cup parsley

3 tbsp lemon juice

2 tbsp Dijon mustard

2 tbsp low-fat mayonnaise

Trim, peel, and coarsely grate the kohlrabi. Chop the parsley. In a large bowl, whisk together the lemon juice, mustard, mayonnaise, and salt until combined. Add kohlrabi and parsley. Toss until well coated. Season with coarsely ground black pepper.
